It all started with LETTUCE!

I've got to admit that salad was never my go-to meal idea. Until I was introduced to a diesel salad by my Italian and professional chef Uncle Pete.

My general salad rules:
  1. Chop everything small so that more flavors can fit in each bite.
  2. Use some crunchy ingredients.
Tonight's salad was delicious because I had a huge variety of veggies available (I heart Costco and farmer's markets!!

Ingredients:
Romain Lettuce (Costco)
Mushrooms (Costco)
Bell Peppers (Costco)
Canned Kidney Beans (Costco)
Avocado (Farmer's Market)
Celery (Farmer's Market)
Garlic (Costco)
Broccoli (Costco)
Cayenne Pepper (Target)
Papaya Seed Dressing

I would suggest equal amounts of each. Most of my cooking is by instinct so try and cultivate your own. Chop everything, and toss in dressing.

  1. Christine credits the name "diesel" salad to Kerry. However, Pete does make a damn good diesel salad. I made eggplant lasagna today. Poppi called and said that it was good that I was cooking. Wish we could share a meal. Your Kitchen Sink Blog will be the next best thing.
